Date & Coconut Cookies


These delectable treats were once again born mainly out of my daughters food intolerances. Most primal biscuit recipes have banana in them, or vanilla, or both and she can’t have either. They are super easy too, it takes me less than 15 mins from deciding I want to make a batch to taking them out of the oven!

Ingredients (for 8-10):
75g ground almonds
75g desiccated coconut
75g cashew nuts
75g dates
Large free range egg
80ml coconut oil

– preheat the oven to 170 degrees and grease a baking tray with coconut oil

– put all ingredients into your blender and whiz slowly, or pulse, until everything comes together into a ball the way pastry would

– spoon out tablespoonfuls of the batter onto the baking tray and cook for 8 mins, until golden brown as pictured below
