Fabulously fudgey little bites of heaven

I’ve been making these little treats a lot lately, experimenting as I go, always getting asked the recipe. I don’t think I can improve them anymore so am finally ready to share the secret…

Ingredients (for 12 cupcake sized treats):
2 eggs
50g ground almonds
50g chopped dark chocolate
40g cocoa powder
120ml coconut milk
2 tbsp tahini
Tbsp coconut oil
Tbsp honey
2 tsp vanilla extract
Handful of hazelnuts (optional)

Method:
– preheat the oven to 175 degrees and line a 12 hole tin with cases

– mix the almonds and chocolate together in a bowl

– whizz all the other ingredients together in your blender

– pour the wet mixture over the almonds and chocolate, combine well

– divide the mixture between the cases and bake for 11 mins

– store leftovers in the fridge
