Dinner – Meatloaf

I’ve never been a huge fan of big slabs of meat for dinner, but must admit it’s growing on me! Here’s a quick and simple meatloaf recipe big enough to fill one loaf tin.

Ingredients:
350g 10% fat beef mince
250g pork mince
5 rashers of unsmoked streaky bacon
Small red onion (finely chopped)
One large clove garlic (minced)
2 tbsp fresh basil (finely chopped)
2 tbsp organic tomato purée
2 tbsp white wine vinegar
40g ground almonds
1 egg

Method:
– preheat the oven to 170 degrees

– in a large bowl mix together all ingredients except the bacon, and squish with your hands, combining everything well

– put the mixture into the loaf tin and top with the bacon

– cook for 25 mins, then turn up the heat to 180 and cook for a further 10 mins to get the bacon nice and crispy

– slice it up and serve with sweet potato fries and greens
