Veggie fajitas

We had some vegetarian friends over for dinner last night so I made these fajitas which went down a storm. The seasoning can easily be made into a larger quantity and stored in an airtight jar for next time.

Ingredients for the seasoning:
1.5 tbsp cornflour
1 tbsp sweet smoked paprika
1.5 tsp veg stock bouillon
1.5 tsp garlic powder
1.5 tsp sugar
0.5 tsp ground cumin
0.5 tsp dried red chili

Large red onion (halved and sliced into rings)
4 peppers (de-seeded and sliced into chunky strips)
1 aubergine (peeled and cut into 1cm cubes)
1 lge or 2 sml courgettes (peeled and cut into 1cm cubes)
2 tbsp balsamic vinegar
Tbsp oil

Method:
– mix all the seasoning ingredients together and set aside in a small bowl

– heat the oil and fry the onions for a couple of minutes, once soft add the peppers and continue to cook over a medium heat

– add half the seasoning mix to the pan and give it a good stir, cook with the lid on for about five more mins

– add the aubergine, courgette and other half of the seasoning and vinegar. Again give it a good stir then cook with the lid on for a further five mins or until all the veggies are cooked

– serve with tortillas, guacamole, salsa, sour cream & grated cheese
