Utterly Fabulous Beef Stew

This stew freezes really well and is wonderful for winter nights when you want something hearty for dinner 🙂

Ingredients (approx 12 portions):
1kg beef shin (cubed)
4 carrots (peeled & cubed)
4 sticks of celery (chopped quite chunky)
3 large onions (sliced chunky)
4 garlic cloves (crushed)
750ml beef stock
500ml ale
Tbsp oil
3 tbsp Thai fish sauce
3 tbsp tomato puree
1 tbsp honey
1 tbsp tamari
1 bay leaf
1 star anise
100g green lentils

– in a large pan, brown off in the meat in the oil and set to one side
– use the same pan to brown off the onions & garlic, adding a little stock if it starts sticking and burning
– put the meat and veg into the pan
– mix all the liquid ingredients together and pour over the meat & veg
– add the bay & star
– bring to the boil then put in the oven and cook with the lid on for two hours on 160 degrees (or 150 for a fan assisted oven)
– stir in the lentils and cook for a further hour with the lid off
– serve with mash and green veggies
